Dollar Tree Now Accepts Coupons!


Great news! Most Dollar Tree stores will start accepting manufacturers' coupons on Sunday August 26, 2012. Just be sure to check with your local store before going on clipping frenzy. Here are the details from their Terms & Conditions page:

1. Only original and intact manufacturers’ coupons will be accepted. Retailer-specific coupons will not be accepted.

2. Coupons are void if copied, scanned, or if they have been altered in any way.

3. Only two (2) print-at-home Internet coupons may be redeemed per transaction.

4. We are unable to accept coupons for “Free” items with no purchase requirements or where the amount for the product is blank.

Vanilla Chia Seed Pudding



I've been on a chia seed kick lately and had to make some pudding. This was my first time making it. I checked out several different recipes and made up my own from them to suit my tastes. It was super easy to prepare and tastes delicious.

Ingredients:

2-1/2 cups plain almond milk
1/2 cup chia seed
1/2 teaspoon vanilla extract
3 packets stevia
cinnamon powder (if desired)
unsweetened shredded coconut (if desired)

Directions:

1. Put almond milk, chia seed, vanilla extract, and stevia in a shaker cup and shake until thoroughly mixed.

2. Pour into a large bowl or keep in the shaker cup and refrigerate 4 hours or overnight.

3. Pour into individual serving bowl and sprinkle with cinnamon and shredded coconut.

Cherries with Ricotta and Toasted Almonds

Warm cherries topped with luscious ricotta cheese and toasted almonds makes for a rich-tasting — yet calorie-conscious — treat.


Servings: 1
Preparation time: 10 minutes

Ingredients:

3/4 cup frozen pitted cherries
2 Tablespoons part-skim ricotta
1 Tablespoon toasted, slivered almonds

Directions:

Heat cherries in the microwave on High until warm, 1 to 2 minutes. Top the cherries with ricotta and almonds.

Tuesday Tips for Healthy Living

Eat six times a day. Set an alarm if you have to. By eating six small meals a day instead of three big ones, your blood sugar will remain steady throughout the day. Plus, you will be less hungry and less likely to binge. At each meal, eat a lean protein and healthy carbohydrate together. 

For example: 

Meal 1 - Shakeology smoothie. 
Meal 2 - Kashi Go Lean cereal with light coconut milk. 
Meal 3 - a piece of fruit, a tablespoon of peanut butter and a few Triscuits. 
Meal 4 - half cup of whole wheat pasta or brown rice with lean ground chicken or turkey and a vegetable. 
Meal 5 - 100% thin whole-wheat bread with almond butter. 
Meal 6 - salad of mixed baby greens and spinach or just spinach, cucumber, tomato, green onion, and low fat salad dressing made with olive oil and a combination of lean meat and healthy carbohydrate such as a tuna/egg salad sandwich on thin whole-wheat bread, chicken breast and Quinoa, or spaghetti with ground chicken or turkey, whole-wheat pasta and marinara sauce. 


If you're hungry later before bed, have a small snack such as a half sandwich, piece of fruit, yogurt, low-fat cottage cheese.

This is just an example to get you started. The main thing to remember is to combine a lean protein and healthy carbohydrate every time you eat your six meals. If you can't fit in six meals, get in at least five.

Tuesday Tips for Healthy Living

Eliminate or drastically reduce sugar from your diet. Cut out candy, cookies, sugary cereal, pastries, soda, soft drinks, sweetened creamer, etc. If you have to have sweets or soda, go for the sugar-free varieties. I know that aspartame and saccharin are bad for you. But if you are obese and sugar is one of your main culprits, the obesity will kill you before the artificial sweeteners will (in my opinion). This is just the first stepping stone. Take it one step at a time.

What I did at first when I eliminated sugar was I bought sugar-free varieties of ice cream, cookies, cereal, soda, and drink mixes. I made sure that I didn't eat extra amounts than I normally would just because there were less calories. That is important. Now I don't even buy these type of treats at all. I opt for fruit when I want something sweet to eat. Sometimes on a "free" day, I might indulge and have a regular brownie or a piece of cake or some other treat. I try to limit it to one day a week. 



Stevia is a great sweetener to use in coffee and tea. You don't even have to go to a health food store to get it anymore. Walmart now sells it and has a generic version.

Asian Beef Stir-Fry

Peppered steak strips with oriental-style vegetables and noodles.
Servings: 4
Preparation Time: 30 minutes
Ingredients:
4 portions spaghetti (about 8 oz uncooked)
4 portions lean steak (about 1 lb)
1/8 tsp crushed red pepper flakes
3 cloves garlic, minced
1 onion, sliced
4 celery stalks, sliced
1 head napa cabbage, shredded
½ cup lite soy sauce
Directions:
  1. Prepare spaghetti according to its package directions; drain and set aside.
  2. While the spaghetti is cooking, slice steak lengthwise into 2-inch strips. Cut crosswise into 1/8-inch-thick slices.
  3. Lightly coat a large skillet or wok with cooking spray. Over medium-high heat, stir-fry red pepper flakes and garlic for 1 minute.
  4. Add the steak strips to the skillet, stir-fry just until no longer pink, approximately 2 minutes. Remove the steak from skillet and set aside.
  5. Lightly recoat the skillet with cooking spray. Stir-fry onion and celery until tender, approximately 5 minutes. Add cabbage and cook until crisp-tender, approximately 2 more minutes.
  6. Return steak to the skillet. Add cooked spaghetti and lite soy sauce; mix gently and heat thoroughly.
  7. Divide into 4 portions, serve and enjoy!

Quinoa Side Dish

Quinoa is a great alternative to rice - it's lighter, and cooks in about half the time.

Preparation time: 35 minutes
Servings: 4

Ingredients:
  • 1 tablespoon butter
  • 1 cup uncooked quinoa
  • 2 cups vegetable broth
  • 2 teaspoons chopped garlic
  • 2 tablespoons chopped fresh parsley
  • 1/2 tablespoon chopped fresh thyme
  • 1/4 teaspoon salt
  • 1 small onion, finely chopped
  • 1 dash fresh lemon juice (optional)
Directions:

  1. Melt butter in a saucepan over medium heat. Add the quinoa, and toast, stirring occasionally, until lightly browned, about 5 minutes. Stir in broth, and bring to a boil. Reduce to a simmer, cover, and cook for 15 minutes, or until quinoa is tender.
  2. In a bowl, toss quinoa together with garlic, parsley, thyme, salt, and onion. Sprinkle with lemon juice, and serve.

Raw Mint-Chip Shamrock Shake




Ingredients  
  • 1-2 Tbs cacao nibs (or chocolate chips)
  • 1 frozen large banana (the more ripe, the better)  
  • 1-2 drops peppermint extract (or handful of fresh mint leaves)  
  • 1/4 cup frozen spinach (or opt for all-natural green food coloring, or just make a white mint shake)
  • 2/3 cup non-dairy milk of choice (coconut, almond, hemp, etc.  Use more or less, depending on desired thickness.)
Optional Ideas & Add-ins
  • cocoa powder 
  • chocolate protein powder
  • garnish with fresh mint leaves 
  • 2-4 drops liquid stevia (Try the peppermint liquid stevia from Sweet Leaf)  
  • a pinch of guar gum and xantham to make pudding (or just reduce milk)
Blend everything together and enjoy!

Homemade Glass Cleaner


I really try to stay away from chemical-laden household cleaners. There are now many different “Green” household cleaning products on the market. You can also make your own household cleansers for a lot less money than you would spend on commercial cleansers. There is really no reason to subject you and your family to harmful chemicals.
I’m allergic to commercial glass cleaner. The ammonia in it will immediately irritate my lungs and can cause me to have an asthma attack. So, I just make my own glass cleaner. I tried using plain vinegar and plain rubbing alcohol. Neither was sufficient on their own. But I have found that a combination of two parts vinegar and one part rubbing alcohol does the trick for my glass cleaning needs.

BPM of Exercise Music



I previously wrote a post about Music and Exercise. I’ve done a little more research on the subject and found that music with a BPM (Beats Per Minute) of 120 to 160 is the best for exercising. Generally, dance music and a lot of rock music are in this range. Play music with a tempo about 120 BPM for walking around 3 MPH, 140 BPM for power walking around 4.5 MPH, and up to about 160 BPM for running.


There is a free program you can download from MixMeister that will measure the BPM of your music. It’s called the BPM Analyzer. There are downloads for PC and Mac. I downloaded the PC version. It is a really fast download and is only 664 KB.




I am currently running the BPM Analyzer and scanning my music. I will then choose songs with a BPM of 120 or more and make playlists from there to correspond with the different exercise routines I engage in. I’ll make one playlist for my cardio sessions on the elliptical, stationary bike, and treadmill, one for my outside power walks, and one for my strength training sessions. I’m not going to rely exclusively on the BPM Analyzer results though. Just because a song may have 150 BPM doesn’t mean it’s a song that will motivate me while I’m exercising.
